Cabbage soup is one of those healthy soups which has long been a favourite with those trying to lose weight, but, it is a delicious, warming and comforting soup that anybody will love.
The cabbage soup is an easy, healthy, vegetable soup recipe which can be easily adapted to suit your taste, so experiment with the ingredients and flavorings as you like.
My recipe for cabbage soup calls for chicken stock but if you want a vegetarian cabbage soup just substitute this for vegetable stock.
How To Make The Cabbage Soup
Follow the instructions below to make the cabbage soup, and don’t be afraid to experiment by adding herbs and spices of your choice or a few chilli flakes if you like that extra kick!
Ingredients You Will Need To Make The Cabbage Soup
- 3 tablespoons olive oil (cut down on the amount of oil or use the healthy olive oil spray if you are trying to cut calories)
- 1 onion, chopped
- 3-4 cloves garlic, minced
- 4 pints chicken stock (made from stock cubes)
- 1 teaspoon salt, or to taste
- black pepper to taste
- 1 head cabbage, cored and chopped
- 1 can chopped tomatoes

Directions To Make Up The Cabbage Soup
1. Heat the olive oil in a large non stick saucepan and add the onion and garlic. Stir and cook over a medium heat for about 5 minutes or until the onion is transparent.
2. Add the stock, salt, and pepper then bring to t boil, now add the cabbage.
3. Simmer for about 10 minutes and return to the boil, then simmer for a further 15 to 30 minutes, stirring often.
4. If you prefer a blended soup you can blend it in the pan using a stick blender , or serve as it is.
